QUICK CHICKEN STIR-FRY

Serves 4


What You'll Need:

  • 500g Country Meat Chicken Fillets
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp olive oil
  • Salt and black pepper


Method:

  1. Slice the chicken fillets into thin strips.
  2. Heat a large frying pan or wok over high heat.
  3. Add the olive oil and cook the chicken for 4–5 minutes until lightly golden.
  4. Add the onion, peppers and garlic.
  5. Stir-fry for 3–4 minutes until the vegetables are tender but still crisp.
  6. Add the soy sauce and honey.
  7. Toss everything together and cook for a further 2 minutes.
  8. Season lightly with salt and black pepper.


Serve With:

  • Steamed rice
  • Egg noodles
  • Cauliflower rice
  • Fresh salad

 

Cook Properly Tip:

Don’t overcrowd the pan. High heat and quick cooking keep the chicken juicy and the vegetables crisp.
