This Middle Eastern Lamb Rib Stew with Dates and Pistachios is the perfect warming meal for a cold winter’s night. With the sweetness of dates, crunch of pistachios, and succulent lamb, this stew is sure to impress.
Ingredients
- 1.5 kg of lamb ribs
- 2 tablespoons of olive oil
- 1 teaspoon of ground cumin
- 3 cloves of garlic, minced
- 2 onions, diced
- 6 tablespoons of tomato paste
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cinnamon
- 2 cups of beef stock
- 1 teaspoon of salt
- 1 teaspoon of freshly ground black pepper
- 1/2 cup of pitted dates, chopped
- 1/2 cup of pistachios, chopped
Instructions
- Preheat the oven to 175°C.
- Heat the olive oil in a large oven-safe pot over medium-high heat.
- Add the lamb ribs to the pot and brown on both sides, about 5 minutes per side.
- Add the garlic, onions, cumin, coriander, and cinnamon to the pot and cook for an additional 3 minutes, stirring occasionally.
- Add the tomato paste and beef stock to the pot and bring to a boil.
- Cover the pot and transfer to the preheated oven. Bake for 1 hour.
- Remove the pot from the oven and add the dates, pistachios, salt, and pepper. Stir to combine.
- Return the pot to the oven and bake for an additional 30 minutes, or until the lamb is tender.
- Serve hot with cooked rice or couscous.
