This delicious Greek-style stew is a hearty and comforting meal. Lamb ribs are slow-cooked in a rich tomato and oregano sauce with potatoes, olives, and feta cheese. Serve it with a side of crusty bread to soak up all the delicious flavors.
Ingredients:
850g lamb ribs
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 675ml chicken stock
- 2 tablespoons dried oregano
- 2 bay leaves
- 500g potatoes, peeled and cut into cubes
- 180g kalamata olives
- 70g feta cheese
- Salt and pepper to taste
Instructions:
- Preheat the oven to 200°C.
- Heat the olive oil in a large oven-safe pot over medium heat. Add the lamb ribs and cook until lightly browned, about 5 minutes.
- Add the onion and garlic and cook until the onion is softened, about 5 minutes.
- Add the tomato paste, chicken stock, oregano, bay leaves, and potatoes. Bring to a simmer and cover the pot.
- Transfer the pot to the oven and cook for 45 minutes.
- Add the olives and cook for an additional 15 minutes.
- Remove the pot from the oven and stir in the feta cheese.
- Season with salt and pepper to taste.
- Serve the stew with crusty bread and enjoy!
