This French Lamb Rib Stew is a rustic, flavorful dish that is sure to please. French Lamb Rib Stew with White Wine and Herbs
Ingredients:
- 1.4 kg lamb ribs, cut into individual ribs
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 2 carrots, diced
- 1 bay leaf
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- 2 tablespoons tomato paste
- 1 cup white wine
- 2 cups beef broth
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper, to taste
Instructions:
- Preheat oven to 180°C.
- Heat the oil in a large pot over medium heat. Add the lamb ribs and cook until lightly browned, about 5 minutes.
- Add the onion, garlic, celery, carrots, bay leaf, thyme and rosemary and cook for another 5 minutes.
- Add the tomato paste, white wine and beef broth and bring to a boil. Reduce heat to low and simmer for 30 minutes.
- Transfer the stew to an oven-safe dish and bake in the preheated oven for 1 hour.
- In a small saucepan, melt the butter over medium heat. Add the flour and stir until a paste forms. Slowly add the remaining beef broth and cook until thickened, about 10 minutes.
- Pour the thickened sauce over the stew, stir to combine and season with salt and pepper to taste.
- Serve with mashed potatoes or crusty bread.
