Braised Lamb Ribs with Red Wine and Mushrooms:

Ingredients:

  • 1 kg lamb ribs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons tomato paste
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 cup (250 ml) red wine
  • 1/2 cup (125 ml) beef broth
  • 8 ounces (225 g) mushrooms, sliced

 

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add garlic, black pepper, and salt and cook for 1 minute.
  3. Add tomato paste, thyme, and oregano and cook for 1 more minute.
  4. Add the lamb ribs and brown on all sides, about 5 minutes.
  5. Add the red wine and beef broth, bring to a boil, and reduce heat to low. Simmer for 5 minutes.
  6. Add the mushrooms and stir to combine.
  7. Transfer the skillet to the preheated oven and cook for 25 minutes.
  8. Remove from the oven and serve.
