Braised Lamb Ribs with Red Wine and Mushrooms:
Ingredients:
- 1 kg lamb ribs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons tomato paste
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 cup (250 ml) red wine
- 1/2 cup (125 ml) beef broth
- 8 ounces (225 g) mushrooms, sliced
Instructions:
- Preheat oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium-high heat. Add garlic, black pepper, and salt and cook for 1 minute.
- Add tomato paste, thyme, and oregano and cook for 1 more minute.
- Add the lamb ribs and brown on all sides, about 5 minutes.
- Add the red wine and beef broth, bring to a boil, and reduce heat to low. Simmer for 5 minutes.
