Nothing says summer like a classic barbecue, and these barbecued lamb ribs with smoky barbecue sauce are sure to be a hit! Tender, marinated lamb ribs are slow-cooked over a smoky barbecue fire, then coated in a lip-smacking sauce with a hint of garlic and chili. Serve with corn on the cob and potato salad for a complete meal.
Barbecued Lamb Ribs with Smoky Barbecue Sauce
Ingredients:
- 2 kg lamb ribs
- 2 tablespoons olive oil
- 2 tablespoons garlic powder
- 1 tablespoon chilli powder
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 2 teaspoons sea salt
- 2 tablespoons brown sugar
- 1/4 cup tomato sauce
- 1/4 cup apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons molasses
Instructions:
- Preheat your barbecue to medium-high heat (180°C).
- In a bowl, combine the olive oil, garlic powder, chili powder, cumin, smoked paprika, salt and brown sugar. Mix until combined.
- Rub the mixture onto the lamb ribs.
- Place the ribs onto the preheated barbecue and cook for 45 minutes, turning every 10 minutes.
- In a bowl, mix together the tomato sauce, apple cider vinegar, Worcestershire sauce and molasses.
- Brush the ribs with the sauce and cook for a further 10 minutes, or until the ribs are cooked through and the sauce is thick and sticky.
- Serve the ribs with your choice of sides.
